Brad
McDonald
After graduating from university, Brad packed his knives and curiosity and left his home state behind, chasing flavor across continents. He honed his craft in the revered Michelin-starred kitchens of Jean-Yves Schillinger in France, Alain Ducasse and Thomas Keller in New York City, and René Redzepi in Copenhagen — each stop sharpening not just his skills, but his vision.
In 2010, he put down roots in Brooklyn, quickly making his mark by co-founding three acclaimed restaurants within three years. The accolades followed — a glowing 2-star New York Times review and mentions in the Michelin Guide. But Brad wasn’t done moving. In 2014, he crossed the Atlantic to bring a bold taste of Southern hospitality to London, charming Marylebone with his soulful take on cornbread and donuts — earning him a cult following and the unofficial title of “Cornbread King.” During this chapter, he authored Deep South, a cookbook steeped in heritage and heart.
Brad’s journey has taken him through the beating hearts of global culinary capitals, leading celebrated restaurants and hotels, and lending his expertise to top-tier brands through collaborations and consulting. Lately, his focus has shifted toward the art of luxury hospitality — where cuisine, design, and experience meet. Today, Brad is a go-to expert in crafting concept-driven, operationally sound, and guest-loved hospitality spaces, blending modern flair with timeless warmth.
Molly is a brand builder, storyteller, and changemaker with a deep-rooted passion for hospitality and a sharp eye on sustainability. With a career spanning front-of-house leadership and strategic marketing roles across the UK’s vibrant hospitality scene, she’s long believed that the true heartbeat of any great business lies in its people and culture — both those creating the experience and those coming to enjoy it.
In recent years, Molly has turned her focus toward the future of the industry: sustainability. She sees hospitality not just as a business, but as a powerful platform for environmental and social impact. As a consultant for one the UK’s leading sustainability platforms, she brings together her knack for communication, her far-reaching network, and her insider’s understanding of hospitality to champion greener, fairer practices from the inside out.
Molly collaborates with some of the most influential names in the industry — from the World’s 50 Best Hotels, Restaurants, and Bars — helping shape a more regenerative and inclusive vision of hospitality. She is also a proud alum of the University of Cambridge’s Sustainability in Business program, equipping her with the tools to turn ambition into lasting change.
